Buffalo Fighting Festival in Phu Ninh Commune – Phu Ninh District

Traditional Vietnamese cooking is greatly admired for its fresh ingredients, minimal use of dairy and oil, complementary textures, and reliance on herbs and vegetables. With the balance between fresh herbs and meats and a selective use of spices to reach a fine taste, Vietnamese food is considered one of the healthiest cuisines worldwide.
There are two sessions per day:
  • Morning session 08:30AM – 12:00PM (by default for online booking)
  • Afternoon session 02:00PM – 05:30PM

PROGRAM SCHEDULE
08:30AM – 09:30AM Market visit (applicable only when market opens for business), accompanied by the Chef to introduce and to let guests understand more about Vietnamese ingredients and theirs substitutions.
09:30AM – 10:00AM Starting with a welcome drink and an introduction of ‘Corner of Vietnamese Traditional Kitchen’ with the legend of ‘Kitchen God’ narrated by English or French speaking MC
10:00AM – 10:30AM Participating in ‘Food preparation’ with the Chef
10:30AM – 11:10AM Enjoying cooking class with selective menu of ‘Traditional dishes’
11:10AM – 11:45AM Enjoying lunch with guests’ own creation.
11:45AM – 12.00PM Handing out the Certificate, a handbook with detailed recipes and a small souvenir
**Afternoon session runs the same activities and the same time frame with the morning session

MONDAY MENU
  1. Spring rolls (Chả giò)
  2. Morning glory salad with pork and prawn (Gỏi rau muống tôm thịt)
  3. Caramel pork in clay-pot (Thịt kho tộ)
  4. Amazing dessert will be offered by Chef (Món tráng miệng ngạc nhiên từ bếp)
TUESDAY MENU
  1. Lotus stem salad with pork and prawn (Gỏi ngó sen tôm thịt)
  2. Grilled beef with lemongrass served with fresh noodle and vegetable (Bò nướng xả dùng với bún tươi và rau sống)
  3. Imperial fried rice (Cơm chiên hoàng bào)
  4. Amazing dessert will be offered by Chef (Món tráng miệng ngạc nhiên từ bếp)
WEDNESDAY MENU
  1. Dumpling with spring onion sauce (Bánh ít trần với sốt hành)
  2. Vegetable salad with pork and prawn (Gỏi ngủ sắc tôm thịt)
  3. Grilled pork rib with broken rice (Cơm tấm thịt nướng)
  4. Amazing dessert will be offered by Chef (Món tráng miệng ngạc nhiên từ bếp)
THURSDAY MENU
  1. Beef salad with star fruit and young banana (Gỏi bò khế chuối chát)
  2. Grilled pork rib with rice noodle (Bún thịt nướng)
  3. Caramel fish in clay pot (Cá kho tộ)
  4. Amazing dessert will be offered by Chef (Món tráng miệng ngạc nhiên từ bếp)
FRIDAY MENU
  1. Mango salad with pork and prawn (Gỏi xoài tôm thịt)
  2. Braised chicken with ginger (Gà kho gừng)
  3. Skewed ball pork meat (Nem nướng)
  4. Amazing dessert will be offered by Chef (Món tráng miệng ngạc nhiên từ bếp)
SATURDAY AND SUNDAY MENU
  1. Salad rolls (Gỏi cuốn)
  2. Chicken noodle soup (Phở gà)
  3. Vietnamese sizzling pancake (Bánh xèo)
  4. Amazing dessert will be offered by Chef (Món tráng miệng ngạc nhiên từ bếp)
